Why does everything come out as WAV?

Because WAV is the one format a browser can write losslessly without an external encoder. It is bigger than MP3 but nothing is thrown away, which is what you want in the middle of an edit.

Is there a length limit?

Decoding holds the whole file in memory as 32-bit samples, so an hour of stereo is roughly 700 MB of RAM. A few minutes is comfortable; a podcast episode will be slow.

Can I extract audio from a video?

Yes. The same decoder handles the audio track of MP4, WebM and MOV files, so you get a WAV of the soundtrack without uploading the video.
